Make rich, velvety Greek yogurt at home with just milk and a live-culture starter. This foolproof recipe yields thick, high-protein yogurt for a fraction of the cost!
Ingredients:
- 2 gallons of whole milk
- 1 cup whole milk yogurt (saved from previous batch)
Instructions:
Heat 2 gallons of whole milk to 150 degrees. Turn off the heat and let it rest at room temp until the temperature comes down to 116. Add 1 cup yogurt (left from the previous batch) and stir well. Cover the pot with a lid, then wrap in a big bath towel, and put in the oven with the light on. Let it rest in the oven overnight. The next morning, remove the pot from the oven and place it in the fridge for at least 2 hours. For extra-thick yogurt, we like to scoop the chilled yogurt into cheesecloth bags and let it drip for about 2 hours (the longer you let it in these bags, the thicker it will be). After this is done, I whisk the yogurt to make it extra creamy and store it plain, or add a little maple syrup and vanilla bean paste for a flavored option.
